So when I made pulled pork, I decided I wasn't going to do anything fancy with it. Simply on a bun with a side of beans and cole slaw would definitely hit the spot. And then I saw the left over blue cheese from 4th of July buffalo wings (no, no, I was selfish and helped consume them all before even THINKING of pulling out the camera). Seeing no need to waste good ole' blue cheese, and wondering how blue cheese cole slaw would taste, I ran quickly to the computer and did a quick search to see if anyone else has done this. And if so...what else have they put in it???
So I found a couple of good looking recipes and picked one based off my (good) experience with cooking other meals from his blog. I must warn you, if you aren't a fan of blue cheese, this isn't the dish for you. But if so...I think you might enjoy this variation once in a blue moon.

Blue Cheese Cole Slaw

- 2 cups coleslaw mix
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 2 tablespoons grainy mustard
- 1 lemon (juice)
- salt and pepper to taste
- 1/4 cup blue cheese (crumbled)
- 1 handful parsley (chopped)
- Mix the mayo, sour cream, mustard, lemon juice, salt and pepper in a bowl.
- Add coleslaw mix and combine together.
- Cover and let mellow in the fridge for a few hours.
