Breakfast of Champions!

This my friends, is my favorite breakfast of champions.  I woke up starving the other day, and I've been on this egg for breakfast kick, so I was just gonna prepare some Siracha scrambled eggs and some toast when I remembered the avocado in the fridge!

Before I found it, I prayed that the avocado would be perfectly ripe.  Not too hard and impossible to eat, not too soft and brown and stringy (Why does an avocado get stringy? Anyone know? I hate it when that happens!).  I was just in luck, because my dear avocado was SO ready for me to eat.  And I ate the whole thing.  Oh what a glorious breakfast.

To make this even better, I had half a sliced tomato left over from the sandwich I made Aaron earlier in the morning. Like 4am earlier.  Yikes.

So I got 2 sliced of 15 grain bread, a couple of spicy scrambled eggs, an avocado and half a Roma tomato.  Sprinkled with a little salt and pepper, I tried my best to savor every bite and not inhale the dish withing 30 seconds.

Lucky for me, avocados have been on mega sale the past few weeks. The commissary has had them for $.50 and I even found them for $.29 at Aldi's.  Needless to say, I've been stocking up.  They've been holding up pretty well in my fridge also.

Now that I've shared my current favorite breakfast for you, what have you been eating in the morning lately?  Are you like my husband and have your go-to bowl of cereal every single morning?  Do you like to mix it up?

  1. On weekday mornings, I need something quick and car-friendly. Recently I've been enjoying a glass of prickly pear juice and a handful of raw cashews for breakfast. Before I decided against having a heart attack in the not too distant future, my usual was a frozen sausage biscuit and a soda. I mix it up on the weekends.

    I do love me a sausage biscuit though. Is it healthy if I make them myself?
